What these tools are for
Recipe measurement is where two reasonable cooks get different results from the same instructions. A cup is a volume, and volume only becomes weight once you know the density of what is in it — a cup of popped popcorn is about 8 g, a cup of honey about 340 g. That is a forty-fold spread hiding inside a single word, which is why weight beats volume for anything that needs to be repeatable.
The other two variables are heat and time. Oven dials disagree with oven cavities, fan settings shift the effective temperature by roughly 20 °C, and sous-vide works on a completely different logic where the target temperature *is* the doneness. Slow cookers and air fryers each need their own translation from a conventional recipe rather than a straight temperature swap.
Salt deserves its own warning. A cup is 292 g of table salt, 240 g of Morton kosher and 142 g of Diamond Crystal kosher — so a recipe written for one and made with another can be off by more than double. If a recipe says "kosher salt" without naming a brand, weigh it.
