Yeast Substitution: Converting Fresh, Active Dry, Instant and Sourdough Starter
The industry-standard ratios for swapping fresh, active dry and instant yeast, why a gram of one is not a gram of another, how teaspoon measures betray you, and how to replace commercial yeast with sourdough starter.
The recipe calls for 20 g of fresh yeast. Your supermarket hasn’t stocked fresh yeast since before you were born, and the sachet in your cupboard says “instant.” Do you use 20 g? Half? A third? Guess wrong in one direction and your dough races, over-proofs and collapses into a beery-smelling flatbread; guess wrong in the other and you’re still waiting for a rise at midnight. Yeast substitution is one of the most common baking conversions there is, and the ratios are simple — once you know why the three forms aren’t interchangeable gram for gram.
Why a gram of fresh isn’t a gram of dry
All commercial baker’s yeast is the same organism, Saccharomyces cerevisiae. What differs is water content and packaging. Fresh (cake or compressed) yeast is about 70% water — it’s literally a damp block of live cells. Active dry yeast has been dehydrated into granules with a coating of dead cells around a live core, and instant yeast is dried more gently into finer, more porous particles where a larger fraction of the cells survive.
So when you dry yeast, you remove most of its weight but keep most of its leavening power. That’s the whole story behind the standard conversion ratios:
- Fresh ÷ 2 = active dry. 20 g fresh ≈ 10 g active dry.
- Fresh ÷ 3 = instant. 20 g fresh ≈ about 6.7 g instant.
- Instant = rapid-rise, 1:1. “Rapid-rise,” “bread machine yeast” and “instant” are the same category in different marketing outfits.
Instant needs the smallest dose both because less of its weight is water and because more of its cells survive drying. Those ratios are the ones the Yeast Converter applies — give it any quantity of any type and it returns the equivalent weight of all the others in one table.
Teaspoons lie: the density trap
Here’s the subtle failure mode: converting by volume. A teaspoon of fresh yeast weighs about 5.6 g, while a teaspoon of active dry or instant weighs only about 3.1 g — dry granules pack far less mass into the same spoon. So “1 tsp fresh → ½ tsp active dry” is not the right move, even though the 2:1 weight ratio is correct, because the teaspoons themselves hold different amounts.
Worked example: a recipe wants 2 tsp of fresh yeast. That’s 2 × 5.6 = 11.2 g fresh. Halve it for active dry: 5.6 g. But 5.6 g of active dry is 5.6 ÷ 3.1 ≈ 1.8 teaspoons — nearly the same volume you started with, not half. If you’d halved the spoons instead of the grams, you’d have used almost 45% too little yeast. This is exactly the kind of arithmetic worth delegating: convert to grams, apply the ratio, convert back to spoons for measuring — or let the calculator do all three steps and read the volume column straight off.
Activation: the step that changes with the type
The substitution isn’t only about quantity — the method moves too:
- Fresh yeast crumbles directly into the flour or dissolves in the warm liquid. It’s the most perishable form (a couple of weeks in the fridge) and should smell yeasty-sweet, never sour.
- Active dry traditionally wants proofing: dissolve it in 38–43 °C water for 5–10 minutes until it foams. That coating of dead cells needs to rehydrate and slough off. Water that’s too hot (above ~46 °C) starts killing the culture; too cold and it wakes up sluggishly. Modern active dry is more forgiving than the packets of decades past, but proofing also doubles as a freshness test — no foam, no bake.
- Instant / rapid-rise was engineered to skip all that: whisk it straight into the dry flour and go. If you substitute instant into a recipe written for active dry, you can simply skip the proofing step (and expect a slightly faster rise).
Replacing commercial yeast with sourdough starter
Sourdough starter at 100% hydration — equal weights of flour and water — can stand in for commercial yeast at roughly 20× the fresh-yeast weight. If a recipe calls for 10 g of fresh yeast, you’d use about 200 g of active, recently-fed starter. But a starter isn’t just leavening, it’s ingredients: half of that 200 g is flour and half is water, so you must subtract 100 g of flour and 100 g of water from the recipe or your dough turns to soup. Expect a longer, slower rise and a tangier flavour — the starter’s wild yeast population is less concentrated than commercial yeast, and its bacteria bring acidity along for the ride. Freshness quietly rewrites the ratios
One caveat before you trust any table, including this one: the ratios assume viable yeast. An opened jar of active dry stored in a warm cupboard for a year may have lost half its potency, at which point the “correct” conversion under-doses your dough anyway. Store dry yeast airtight in the fridge or freezer, proof anything you doubt, and when a bake rises slower than the recipe promised, suspect the yeast’s age before the math.

Every substitution comes down to the same routine: get the source amount into grams (respecting the density of that yeast type), convert through the fresh-yeast equivalence, and re-express the result in whatever the target form measures best.
