Volume measurements — scoops, tablespoons, “cups” — are unreliable because coffee grounds vary wildly in density depending on the bean, the roast level, and how finely you grind. A tablespoon of light-roast beans weighs noticeably more than a tablespoon of oily dark roast. A kitchen scale that reads in grams removes all of that guesswork, which is why every serious recipe is specified by weight. The “golden ratio” and why it exists

The ratio still governs the result: a longer “lungo” pull at 1:3 tastes more diluted and often more bitter, while a short “ristretto” at 1:1.5 is syrupy and intense.
Cold brew flips the logic. Because you’re steeping for 12–24 hours at room or fridge temperature, you use a very strong ratio to make a concentrate, then cut it with water or milk to taste when serving. The long steep compensates for the lack of heat.
French press runs slightly stronger (1:15) because the metal mesh lets fine particles and oils through, giving a heavier body — and because no paper filter is absorbing flavour on the way out.

- Weigh everything — coffee and water both, in grams.

Is 1 ml of water really 1 gram? Effectively, yes — water has a density of almost exactly 1 g/ml at brewing-relevant temperatures, so 320 g of water is 320 ml. This is why brewing by weight is so convenient.
